Sudanese Ful Medames with Tomato Salad
Creamy fava beans, cumin, lemon, and a fresh tomato topping make a fast, filling plant-based dinner.

Ingredients
- 2 tablespoons olive oil, divided
- 1 small red onion, finely diced, divided
- 3 garlic cloves, minced
- 2 cans (15 ounces each) fava beans, drained and rinsed
- 1/2 cup water or vegetable broth
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon kosher salt
- 2 tablespoons fresh lemon juice
- 2 medium tomatoes, diced
- 1/4 cup chopped parsley
- 4 warm pita breads
Steps
- Heat 1 tablespoon of the oil in a skillet over medium heat. Cook half the onion for 3 minutes, then add the garlic for 30 seconds.
- Add the fava beans, water, cumin, paprika, and salt. Simmer for 8 minutes, stirring occasionally.
- Mash about half the beans with a potato masher, leaving the rest whole for texture.
- Stir in the lemon juice and keep warm over low heat.
- Mix the tomatoes, parsley, remaining onion, and remaining olive oil in a bowl; season to taste.
- Spoon the ful into bowls, top with the tomato salad, and serve with warm pita.
