Sudanese Ful Medames with tomato salad and pita

Ingredients

  • 2 tablespoons olive oil, divided
  • 1 small red onion, finely diced, divided
  • 3 garlic cloves, minced
  • 2 cans (15 ounces each) fava beans, drained and rinsed
  • 1/2 cup water or vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon kosher salt
  • 2 tablespoons fresh lemon juice
  • 2 medium tomatoes, diced
  • 1/4 cup chopped parsley
  • 4 warm pita breads

Steps

  1. Heat 1 tablespoon of the oil in a skillet over medium heat. Cook half the onion for 3 minutes, then add the garlic for 30 seconds.
  2. Add the fava beans, water, cumin, paprika, and salt. Simmer for 8 minutes, stirring occasionally.
  3. Mash about half the beans with a potato masher, leaving the rest whole for texture.
  4. Stir in the lemon juice and keep warm over low heat.
  5. Mix the tomatoes, parsley, remaining onion, and remaining olive oil in a bowl; season to taste.
  6. Spoon the ful into bowls, top with the tomato salad, and serve with warm pita.
