Sudanese Ful Medames with Tomato and Egg, finished dinner

Ingredients

  • 1 tbsp olive oil
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 can fava beans, drained and rinsed
  • 1 small tomato, diced
  • 1/2 cup vegetable stock
  • 1 tbsp lemon juice
  • 1 tbsp tahini
  • 2 eggs
  • 1 small pita, warmed
  • 1/2 cucumber, diced
  • 2 tbsp chopped parsley
  • Aleppo pepper or chili flakes
  • Salt and black pepper

Steps

  1. Heat oil in a skillet and cook onion for 3 minutes. Add garlic and cumin and stir until fragrant.
  2. Add fava beans, tomato, and stock. Simmer 5 minutes, then crush about one third of the beans with a spoon.
  3. Stir together lemon juice and tahini with 1 tablespoon hot bean liquid until smooth, then fold it into the beans.
  4. Make two wells in the mixture, crack in the eggs, cover, and cook 4 to 6 minutes until the whites are set and yolks are as you like.
  5. Season with salt, pepper, and Aleppo pepper, taking care not to break the warm yolks.
  6. Serve with pita, cucumber, parsley, and an extra squeeze of lemon.
