Salvadoran Bean and Cheese Pupusas with Curtido
Griddled masa cakes hold refried beans and cheese and come with a crisp tangy cabbage slaw.

Ingredients
- 3 cups masa harina
- 2 1/2 cups warm water
- 1 tsp kosher salt
- 1 cup refried beans
- 1 1/2 cups shredded mozzarella
- 3 cups finely shredded cabbage
- 1 carrot, grated
- 1/2 small onion, thinly sliced
- 1/2 cup apple cider vinegar
- 1/2 cup hot water
- 1 tsp dried oregano
- 1/4 tsp red pepper flakes
- Vegetable oil, for the griddle
Steps
- Mix cabbage, carrot, onion, vinegar, hot water, oregano, red pepper and 1/2 teaspoon salt; rest 30 minutes.
- Mix masa harina, warm water and remaining salt into a soft dough; rest 10 minutes.
- Divide into 12 balls, make a well in each, add beans and cheese, seal and pat into 1/4-inch-thick discs.
- Lightly oil a griddle and cook pupusas over medium heat until browned and cooked through, 4 to 5 minutes per side.
- Drain curtido and serve alongside hot pupusas.
