Polish Potato Cheese Pierogi with Caramelized Onions
Homemade potato-cheese pierogi and sweet caramelized onions make a cozy Polish dinner for two.

Ingredients
- 1 cup all-purpose flour
- 1 egg
- 3 tbsp warm water
- 1 small potato, peeled and cubed
- 3 oz farmer cheese or ricotta
- 1/2 small onion, thinly sliced
- 1 tbsp butter
- 2 tbsp sour cream
- 1 tbsp chopped chives
- Salt and black pepper
Steps
- Boil potato until tender, drain and mash with cheese, salt and pepper.
- Mix flour, egg, water and a pinch of salt into a smooth dough; rest 10 minutes.
- Roll dough thin, cut circles, fill each with potato mixture and seal edges firmly.
- Boil pierogi in simmering water until they float, then cook 2 minutes more.
- Cook onion slowly in butter until deeply golden.
- Serve pierogi with onions, sour cream and chives.
