Persian Adas Polo Lentils with dates raisins and caramelized onions

Ingredients

  • 1/2 cup brown lentils
  • 1/2 cup basmati rice
  • 1 tbsp olive oil
  • 1 small onion, thinly sliced
  • 4 pitted dates, chopped
  • 2 tbsp raisins
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground cumin
  • 1 1/2 cups vegetable broth
  • 2 tbsp plain yogurt
  • 1/2 tsp kosher salt
  • 1 tbsp chopped parsley

Steps

  1. Simmer lentils in water until just tender, about 18 minutes, then drain.
  2. Cook rice in vegetable broth until tender.
  3. Cook onion in olive oil until deeply golden; reserve half for garnish.
  4. Fold lentils, dates, raisins, cinnamon, cumin, salt, and the remaining onion into the rice and warm through.
  5. Serve with yogurt, parsley, and the reserved crisp onion.
