Macedonian Tavče Gravče Bean Bake, finished dish

Ingredients

  • 2 tbsp olive oil
  • 2 onions, thinly sliced
  • 1 red bell pepper, diced
  • 4 garlic cloves, sliced
  • 2 tbsp sweet paprika
  • 1 tsp dried mint
  • 2 cans (15 oz each) large white beans, drained
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup vegetable broth
  • 1 bay leaf
  • 2 tbsp chopped parsley
  • Kosher salt and black pepper
  • Crusty bread, for serving

Steps

  1. Heat oven to 400°F. Warm olive oil in an oven-safe skillet and cook onions and bell pepper until soft and beginning to brown.
  2. Add garlic, paprika and mint and stir for 30 seconds to bloom the spices.
  3. Fold in beans, tomatoes, broth and bay leaf. Season with salt and pepper.
  4. Bake uncovered until the beans are creamy and the top has darkened at the edges, 25 to 30 minutes.
  5. Discard bay leaf and let the casserole rest 5 minutes so the juices thicken.
  6. Finish with parsley and serve with bread.
