Macedonian Tavče Gravče Bean Bake
White beans, peppers and paprika bake into a richly flavored Macedonian-style vegetarian casserole.

Ingredients
- 2 tbsp olive oil
- 2 onions, thinly sliced
- 1 red bell pepper, diced
- 4 garlic cloves, sliced
- 2 tbsp sweet paprika
- 1 tsp dried mint
- 2 cans (15 oz each) large white beans, drained
- 1 can (14.5 oz) diced tomatoes
- 1 cup vegetable broth
- 1 bay leaf
- 2 tbsp chopped parsley
- Kosher salt and black pepper
- Crusty bread, for serving
Steps
- Heat oven to 400°F. Warm olive oil in an oven-safe skillet and cook onions and bell pepper until soft and beginning to brown.
- Add garlic, paprika and mint and stir for 30 seconds to bloom the spices.
- Fold in beans, tomatoes, broth and bay leaf. Season with salt and pepper.
- Bake uncovered until the beans are creamy and the top has darkened at the edges, 25 to 30 minutes.
- Discard bay leaf and let the casserole rest 5 minutes so the juices thicken.
- Finish with parsley and serve with bread.
