Honduran Baleadas with Beans and Eggs

Soft tortillas spread with creamy beans, eggs and avocado make an inexpensive, speedy Honduran-inspired dinner.

Folded flour tortillas with mashed beans, eggs, avocado and cheese

Ingredients

  • 4 medium flour tortillas
  • 1 tbsp olive oil
  • 1/2 cup refried black beans
  • 2 tbsp water
  • 4 large eggs
  • 1/2 avocado, sliced
  • 1/3 cup crumbled queso fresco
  • 2 tbsp crema or sour cream
  • 2 tbsp chopped cilantro
  • Hot sauce, to taste
  • Kosher salt and black pepper

Steps

  1. Warm tortillas in a dry skillet over medium heat until flexible, then stack and wrap in a towel to keep warm.
  2. Warm the refried beans with water in a small saucepan, stirring until smooth and spreadable.
  3. Heat olive oil in a nonstick skillet and cook eggs to your preferred doneness; season with salt and pepper.
  4. Spread each tortilla with beans, then add an egg, avocado, queso fresco, crema and cilantro.
  5. Add hot sauce if desired, fold each baleada in half, and serve right away.
