Ethiopian Atakilt Wat Cabbage Potato Stew with carrots and green beans

Ingredients

  • 1 tbsp olive oil
  • 1 small onion, sliced
  • 2 garlic cloves, minced
  • 1 tsp ground turmeric
  • 1/2 tsp ground ginger
  • 2 cups shredded cabbage
  • 1 small potato, cubed
  • 1 carrot, sliced
  • 1 cup green beans, cut
  • 1/2 cup vegetable broth
  • 1/2 tsp kosher salt
  • 2 small pieces flatbread

Steps

  1. Heat olive oil in a covered skillet and cook onion until tender.
  2. Stir in garlic, turmeric, and ginger for 30 seconds.
  3. Add cabbage, potato, carrot, green beans, broth, and salt; cover and cook over medium-low heat.
  4. Stir once or twice and cook until potatoes and carrots are tender, 18 to 20 minutes.
  5. Taste for salt and serve in two bowls with warm flatbread.
