Burundian Bean and Plantain Stew
Red beans, tender plantain, tomato, and greens cook into a colorful vegetarian stew for two.

Ingredients
- 1 tbsp oil
- 1 small onion, diced
- 1 garlic clove, minced
- 1 tsp ground cumin
- 1 cup crushed tomatoes
- 1 1/2 cups cooked red beans
- 1 ripe plantain, cut into chunks
- 1 cup chopped kale
- 1/2 cup vegetable broth
- 1/2 tsp kosher salt
- 1/2 cup cooked rice
- 1 tbsp lime juice
Steps
- Cook onion in oil until soft; add garlic and cumin for 30 seconds.
- Stir in tomatoes, beans, broth, and salt and simmer 8 minutes.
- Add plantain, cover, and cook until tender but not falling apart, about 8 minutes.
- Fold in kale and cook until wilted.
- Stir in lime juice and serve over warm rice.
