Argentine Humita Corn Skillet, finished dish

Ingredients

  • 2 cups corn kernels
  • 1 tbsp butter
  • 1/2 onion, diced
  • 1 garlic clove, minced
  • 1/2 roasted red pepper, chopped
  • 1/3 cup milk
  • 1 tbsp cornmeal
  • 1/2 cup shredded mozzarella
  • 1 egg
  • 1 tbsp chopped basil
  • Salt and black pepper

Steps

  1. Heat oven to 400°F. Blend half the corn with milk until creamy, leaving the rest whole.
  2. Cook onion and garlic in butter in an oven-safe skillet until soft.
  3. Stir in both corn mixtures, red pepper, cornmeal, salt and pepper; cook until lightly thickened.
  4. Remove from heat, stir in egg, top with mozzarella, and bake until set and browned, 12 to 15 minutes.
  5. Rest 5 minutes, scatter with basil, and spoon into two bowls.
